Why I Wrote a Cookbook by Marla Vail


I enjoy taking cooking classes, experimenting with new recipes, and flipping through cooking magazines. After I’ve made a new dish, I post photos on social media. It’s a fun creative outlet where I can forget about my workload at the salon or about helping my detective husband, Dalton, solve crimes.

As my number of favorite recipes expanded, I thought about compiling them into a cookbook. It could be a fun legacy to hand down to my kids. Dalton’s teenage daughter, Brianna, already likes to cook. She’d appreciate a family cookbook to use in her own kitchen someday. And now that Dalton and I are expecting our first child together, publishing a book of recipes would hold a special meaning for me.

I remember how my mother had found a stash of hand-written recipes after my grandmother died. It brought tears to Ma’s eyes to remember her own mother this way. Some of our best early memories, especially around the holidays, involve our female relatives in the kitchen. Wouldn’t you like to create some new memories for your loved ones?

I’d already been typing my growing list of recipes into my computer. It would simply be a matter of collecting this data into one long file to create a cookbook, right? Wrong! I had a lot to learn about producing a cookbook. If I’d known then what I know now, I might never have started this project. But once I began, I felt compelled to put the book together. I am thrilled with the result.

With the holidays approaching, you might be looking for some new recipes to try instead of repeating the same repertoire from years past. Here’s a healthier variation on the standard sweet potatoes to accompany your turkey dinner.

SWEET POTATOES WITH RED ONIONS AND ROSEMARY

Ingredients

3 large sweet potatoes, peeled
8 Tbsp. canola oil
3 tsp. minced garlic
2 large red onions, peeled
2 Tbsp. chopped fresh rosemary
¼ cup grated Parmesan cheese


Directions

Preheat oven to 375 degrees. Cut potatoes lengthwise and then into one inch cubes. Mix with 6 Tbsp. oil and minced garlic. Spread on greased, foil-lined baking sheet. Meanwhile, cut onions lengthwise and then crosswise into chunks. Mix with remaining 2 Tbsp. oil and spread on another greased, foil-lined baking sheet.

Put potatoes on center rack and onions on bottom rack. Roast for 30 minutes. Halfway through, turn both batches and sprinkle rosemary on potatoes. When both vegetables are tender, remove from oven and toss together in a bowl. Sprinkle cheese into mixture before serving. Serves 4 to 6.
