The book is set in the small north Iowa town of Lake Livonian and centers on the community of the Potluck Paradise Café owned by Susan Stewart.



    Tamale Pie

Modernizing this classic World War I recipe in the Potluck Paradise Cafe kitchen was as easy as reaching for the jar of salsa. No need to mince and sauté peppers and onions any longer for what is a tasty cross between cornbread and pizza.

½ cup cornmeal, uncooked
1 ½ cups boiling water
1 cup salsa, not chunky style
2 cups cooked, chopped meat, hamburger, minced beef, or chicken
½ cup cheddar cheese, grated

1 cup tomato sauce
½ cup chopped olives (optional)

You will also need:
Butter or cooking spray to grease a 9-inch pie plate

Preheat over to 350 degrees F. Stir the cornmeal into the boiling water, reduce heat and cook, stirring from time to time, until cornmeal is thick. In a medium bowl, combine salsa with the meat. Stir in the warm cornmeal, mixing thoroughly. Press mixture into a lightly greased 9-inch pie plate. Sprinkle the top with cheese. Bake until the pie is firm and the cheese is melted, about 10 to 15 minutes. Serve with  tomato sauce. You may add ½ cup chopped olives to this tomato sauce.
